Vegan Colby Cheese

Vegan Colby Cheese


1 c. raw cashews
2 c. water
1-2 red peppers (hot or not)
1  tsp. salt
3-4 tsp. onion powder
2 TBS. nutritional yeast
3 tsp. garlic powder
Cayenne (to taste) 

Boil water. Turn it off and add the one cup of cashews to the water and let soak for at least 20 minutes. (it will soften them up even more so) Drain the cashews and add all ingredients to the blender.  Blend until smooth. Pour into pot on stove and without stopping stir until thickened. 

Perfect cheese sauce to use as you want. Adding additional seasonings and taste test until you like the flavor.
